Should I apologise immediately or is waiting for the post better?

Say a brief, sincere sorry in person if you can — then let the letter do the deep work. Arriving a few days later, it shows the apology survived the cooling-off period. That's what proves it was real and not just adrenaline in reverse.

How do I apologise after saying something I cannot take back?

Quote the words back and take them back one by one, rather than apologising for 'the fight'. Say clearly that it wasn't true, if it wasn't, and that you knew where it would land. Writing lets you do that precisely, in a way you will never manage out loud.

How long should I wait before apologising after a huge argument?

Long enough to be calm and to know what you are actually sorry for — often a day or two, sometimes longer. Apologising while still angry tends to produce a defence with the word sorry in it. Posted delivery takes about 3–6 days, which builds the pause in for you.

Should I say sorry twice if they have not responded to the first apology?

Repeating it quickly usually turns the apology into pressure, and the other person ends up managing your guilt. Better to say it once, properly and in full, and then let time and behaviour do the rest. A letter is a good way to make that single, complete attempt.
